Make Johnnycakes

Johnnycakes were cornmeal pancakes and were very common in colonial America.

Ingredients:  

2 cups cornmeal

1 cup hot water

2 tablespoons sugar

pinch of salt

1-2 tablespoons of butter

blueberries (or raisins)

 

Steps:

  1. Add the cornmeal, hot water, salt and sugar into a mixing bowl.  Stir with a wooden spoon.  Mix in the blueberries.
  2. Let the mixture sit for thirty minutes, then form into eight flat pancakes.
  3. Melt the butter in a frying pan over medium heat.  Fry the pancakes in the butter until golden brown on both sides.  

Serve with syrup!
